Henssler Henssler is the original sushi bar that Steffen Henssler opened together with his father Wolfgang on Große Elbstraße in 2001. Long before he became a household name as a television chef, Henssler honed his craft in Los Angeles and Tokyo — the Californian-Japanese fusion line still defines the restaurant today. Day-to-day service is led by head chef Sebastian Bohl and his team; Henssler himself still works the pass regularly. The address sits between the Fischmarkt and the Altonaer Hafenbalkon, in the middle of the restaurant mile along the northern bank of the Elbe — a few steps from Dockland and Stilwerk. The menu pairs classic Edomae sushi and sashimi with creative maki rolls, alongside hot dishes from the open kitchen: pan-fried black cod with miso, wagyu tataki, lobster tempura and the house spicy tuna. Lunch runs a shortened bento and lunch menu; evenings are dominated by multi-course omakase sets. The setting is sober and modern: dark wood, a long sushi counter facing the chefs, a wide window front to the Elbe. In summer the terrace opens directly onto the water. Reservations are strongly recommended in the evening and at weekends, often two to three weeks in advance, especially for counter seats. Price-wise the house sits in the upper middle of Hamburg's fine-dining bracket: mains between €32 and €58, omakase from around €110 per person. Getting there: S1/S3 to Reeperbahn (ten-minute walk) or bus 111 directly to Fischmarkt. From Altona station it's about 15 minutes on foot, downhill. Ideal for: sushi lovers with a soft spot for Japanese-Californian fusion, business dinners with an Elbe view and special evenings on the harbour.
