Carls Brasserie is the French sister to Tschebull and has occupied the historic Kaispeicher A plinth directly beneath the Elbphilharmonie since 2007. The concept follows the classic Parisian brasserie tradition: white tablecloths, dark wood, a long bar, open kitchen. The owners are the Tschebull family, who with Carls set one of HafenCity's earliest gastronomic anchors — years before the quarter took on its present shape. The location on Kaiserkai, at the foot of the Plaza staircase and looking out over the Großer Grasbrook, is unique by Hamburg standards: harbour edge, Elphi wall and Speicherstadt silhouette in a single frame. The menu offers the classics you expect from a good brasserie — steak frites with béarnaise, coq au vin, bouillabaisse, tarte Tatin, crème brûlée. Alongside it, a small selection of North German notes like Matjes or Pannfisch. The wine list leans French, with solid breadth from the by-the-glass list upwards. The interior is by Hamburg practice Stephen Williams and combines industrial traces of the Kaispeicher with Parisian brasserie vocabulary: brass detailing, black leather banquettes, a large window front to the water. In summer the terrace opens directly onto the quay. Reservations are strongly recommended in the evening and on Elbphilharmonie concert days, and at weekends a few days ahead. Mains run between €28 and €44, the lunch special around €22. The price level is fair given the location and quality, noticeably below the hotel restaurants in the immediate neighbourhood. Getting there: U4 Überseequartier, four minutes on foot across the Magdeburger Hafen; alternatively U3 Baumwall, seven minutes along Kaiserkai. Ideal for: dinner before or after a concert at the Elbphilharmonie.
