Bullerei has been Tim Mälzer's gastronomic headquarters in Hamburg since 2009 and has made its Schanze location a fixed address for unpretentious, product-driven cooking. Born in Hamburg and known well beyond the city through television, Mälzer curates the concept with his kitchen team: honest craft, clear flavours, no frills on the plate. Location: Lagerstraße 34b, in the western Schanzenviertel on the border with the Karoviertel, a few steps from the old slaughterhouse grounds. The restaurant sits in a listed brick hall of the former central livestock market from the late 19th century — high ceilings, exposed steel beams, long tables, open kitchen. The menu splits into the casual Deli for pasta, salads and burgers, and the evening restaurant with a more refined line: grass-fed beef tartare, pasta with octopus, dry-aged steaks from the charcoal grill, braised lamb shoulder and seasonal vegetables from the North German region. Bread comes fresh from the in-house bakery, the ice cream is made on site. Atmosphere: loud, packed, lively — industrial romance with enamel lampshades and long bar counters. Anyone after peace and quiet is in the wrong place; anyone who wants to feel Hamburg Schanze energy is in the right one. Reservations are practically obligatory, particularly on Friday and Saturday evenings and during trade-fair weeks — online via the website or by phone, ideally two to three weeks ahead. Price level €€: mains run between €22 and €36, the tartare around €19, a steak between €38 and €48 depending on the cut. Getting there: S-Bahn Sternschanze (S11/S21/S31), three minutes on foot via Lagerstraße.
