The Haerlin at the Fairmont Hotel Vier Jahreszeiten has been the quiet constant of Hamburg's fine dining for decades. Named after Friedrich Haerlin, who from 1897 turned the grand hotel into the city's leading address, head chef Christoph Rüffer has run the restaurant since 2002 and has held two Michelin stars without interruption - a consistency that is rare in Germany. His style: a classical French foundation, precise sauces, north German produce, no gimmicks. The Neustadt location on Neuer Jungfernstieg looks straight out over the Binnenalster - Alster steamers in summer, the lit-up city skyline in winter. A few steps to Jungfernstieg, Mönckebergstraße and Gänsemarkt. The menu offers a choice of two tastings of seven or nine courses, plus a vegetarian version. Signature dishes include Breton lobster with sauce américaine, turbot with champagne beurre blanc and venison from north German estates with juniper jus. The pastry section under head pâtissier Kevin Lacour is considered one of the finest in the country. The wine list runs to around 1,000 references, with a focus on Burgundy and Bordeaux. The dining room is wood-panelled, with cream walls, chandeliers and heavy fabrics - 1920s grand hotel atmosphere, gently modernised. Tables are well spaced, service in dark suits, quiet and precise. Reserve at least three to four weeks ahead, longer at weekends. Menus from around 245 euros per person, with wine pairing from 380 euros - premium level, but reasonably priced compared with equivalents in Paris or Munich. Getting there: U1/U2 Jungfernstieg, three minutes on foot. Five minutes by taxi from the main station. Ideal for special occasions - anniversaries, serious business dinners, a long evening where the kitchen takes centre stage.
